Happy White Chocolate Cheesecake Day Yes, it’s a thing. And no, I didn’t know it was when I baked a cheesecake today. Had I known, I would have made it white chocolate instead of coffee-espresso.

OK. I’m keeping this recipe mistake in most, if not all of my cheesecakes. Reaplace sour cream and heavy cream with yogurt. This coffee/espresso cheesecake is a lot softer and lighter than standard cheesecake. Reminds me of pudding, but not as liquid. Yum. #baking #cheesecake

OK. The cheesecake is cooling in the oven. Looks great. No cracks, despite not using a water bath. Started at low temp and then cranked it after a while. We’ll see what it’s like in a couple of hours. #baking

Sigh. I should know better… mise en place. I got lazy. I started making a cheesecake, but discovered I was out of a few ingredients. I made do with what I had. We’ll see what it does. #baking
